Week No. 2

Well we made it through week 1.  It was so awesome to be planned every night when we got home from work, not to mention the nights that the slow cooker was on…that was a nice break!  Here is week 2.   I chose a healthier menu plan for this week but it still looks delicious.  I believe that eating healthy doesn’t have to scare people.  There are so many delicious healthy recipes out there.  (Here is one of my favs that I love!!!!)

I am working on a document that will list all the meal plans we try all in one place so you can quickly find the one you are looking for. Just trying to work out the details…I want it to list all the criteria (ie. kid friendly, low calorie, free, budget friendly etc…)

Again this one didn’t have a grocery list but I have posted it below for you.  Each meal has a side dish which I like but there isn’t a recipe linked up to it.  I put the items on the grocery list but a bit of creativity will be required on your part. Or you can check out my Pinterest Board that has tons of sides and veggie dishes.

Monday ~ CHEESE STUFFED CHICKEN BREAST with GREEN BEANS

Tuesday ~ FUSILLI WITH MEATBALLS with CUCUMBER SALAD

Wednesday ~ PAN FRIED PORK FILLETS with BAKED APPLES AND SWEET POTATOES

Thursday ~ FETTUCCINE WITH SCALLOPS, ASPARAGUS AND LEMON with CAESAR SALAD

Friday ~ GRILLED MARGARITA FLANK STEAK with CORN ON THE COB

Saturday ~ CHIPOTLE CHICKEN CORN PIZZA

Sunday ~ PORK CHOPS WITH APPLE CREAM SAUCE with BUTTERED GREEN BEANS & APPLESAUCE

Grocery List

6 boneless, skinless chicken breasts Green beans (2 meals) 4 slices Swiss Cheese 12 oz fusili pasta thyme leaves olive oil
4 slices prosciutto ham or low sodium ham 1 cucumber eggs 8 oz fettucini oregano dry white wine
1 lb lean ground beef lg. onion skim milk 10 oz pizza dough chipotle seasoning mix whole tomatoes (28 oz)
1 1/2 lb pork tenderloin 2 garlic cloves cheddar cheese parsley bread crumbs
1 lb sea or baby scallops fresh basil fat free half and half honey mustard
1 lb flank steak 1 lemon 1/4 cup chopped  almonds
4 pork chops 2 plum tomatoes tequila
1 bunch asperagus canned mexican style corn*
1 head romaine lettuce dijon mustard
1 sweet potato reduced sodium chicken broth
1 lime
corn on the cob
3 green onions
1 golden delicious apple
